Asian Poached Chicken


PREP TIME 5 minutes
COOK TIME 20 minutes


2 cups water
1 brown onion, roughly chopped
1 chilli, chopped
3 spring onions, chopped into thirds
2 garlic cloves
1 inch knob of ginger, roughly chopped
½ cup caster sugar
1 cup Chinese cooking wine
⅓ cup soy sauce
Pinch of Tasman sea salt
1 tsp cracked pepper
3 Nichols chicken breast


Step 1
Into a pot of water add brown onion, chilli, spring onion, garlic, ginger, sugar, Chinese cooking wine, soy sauce, salt and pepper. Bring to the boil and simmer for 5 minutes.

Step 2
Add in chicken breasts and bring back up to the boil. Once it has reached boiling point, reduce to a simmer and cook for a further 15 minutes. Remove chicken and use two forks to pull apart the breast.
