Greek Potato Salad


PREP TIME 5 minutes
COOK TIME 20 minutes


4 potatoes
½ tbsp caster sugar
2 tbsp red wine vinegar
1 tbsp dijon mustard
½ cup greek yoghurt
½ red onion, sliced
2 tbsp capers, drained
½ cup black olives, halved
2 tbsp pine nuts, toasted
½ bunch parsley leaves, plus extra to serve


Step 1
Add potatoes to a pot of boiling water and boil until soft.

Step 2
Meanwhile, in a small bowl mix together caster sugar and red wine vinegar, until sugar has dissolved. Add dijon must and greek yoghurt, stir to combine.

Step 3
Remove potatoes from the pot and cut into quarters. Add to the dressing along with onion, capers, olives and parsley.

To serve, place potato mixture onto a plate, top with toasted pine nuts and fresh parsley.
