Huon Salmon Poke Bowl


PREP TIME 10 minutes
COOK TIME 30 minutes


250g fresh Huon salmon fillet without skin, diced into bite size pieces
1 tsp garlic, finely diced
½ tsp ginger, finely diced
Juice of ½ a lime
¼ tsp sesame oil
1 tsp soy sauce
1 tsp sesame seeds
1 cup kale, shredded
½ red onion, thinly sliced
3 spring onions, thinly sliced
1 chilli, sliced with seeds removed
1 tsp black sesame seeds, to serve
Fresh micro herbs, to serve


Step 1
In a small bowl combine salmon, garlic, ginger, lime juice, sesame seed oil, soy sauce and sesame seeds. Mix together and place in the fridge for around 30 minutes.

Step 2
Meanwhile, in a separate bowl, add kale, red onion, spring onion, chilli and toss together.

To serve, place kale mix into a bowl and top with marinated salmon pieces. Sprinkle with black sesame seeds and garnish with fresh micro herbs.
