Huon Salmon Tartare


PREP TIME 10 minutes
COOK TIME 5 minutes


½ cup Huon salmon loin fillet lightly smoked, diced
1 tbsp purple shallots, diced
1 tbsp red chilli, diced
1 tbsp cucumber, diced
1 tbsp gherkins, diced
1 tbsp capers, diced
1 tbsp Pukara lemon oil
Juice of ½ a lemon
Pinch of Tasman sea salt
2 radishes, thinly sliced
Fresh dill, to garnish


Step 1
Place salmon, shallots, chilli, cucumber, gherkins and capers in a bowl and stir. Dress with lemon oil and lemon juice, season with salt.

To serve, place radish rounds on a plate, spoon salmon mixture on top. Garnish with fresh dill.
