Kingfish and Pickles

1 small zucchini
100g fresh kingfish loin
Pickled red onions and cucumbers (refer to recipe on website)
6-8 cherry tomatoes, cut in half
2 tbsp Pukara olive oil
2 tbsp water
Fresh chervil, to serve
Slice the zucchini into thin rounds using a sharp knife or a mandolin.
Using a sharp knife slice the kingfish into thin strips.
In a small jar, mix olive oil and water by shaking the jar to combine.
To serve, build layers of each ingredient, drizzle over dressing and garnish with fresh chervil.
