Panzanella Salad

INGREDIENTS

3 slices sourdough
8-10 cherry tomatoes, halved
4-5 olives, halved
½ a chilli, sliced
1 garlic clove
2 tbsp tomato juice
1 tbsp Pukara olive oil
2 tbsp persian feta
2 tbsp parmesan cheese
Fresh parsley leaves

METHOD

Step 1
Rub a garlic clove over the sides of each sourdough slice.

Step 2
Mix together tomato juice and olive oil.

Step 3
In a bowl, toss together cherry tomatoes, olive and chillies.

To serve, spread persian feta over sourdough, top with salad mix, tomato dressing and grated parmesan cheese. Garnish with fresh parsley leaves.
