Paper Baked Lemongrass Chicken
PREP TIME 10 minutes
COOK TIME 20 minutes
2 Nichols chicken breasts, butterflied
1 bunch pak choy
½ bunch coriander
1 lemongrass stick, cut lengthways
For the dressing;
½ tsp sesame oil
3cm knob fresh ginger, thinly sliced
Juice of 1 lime
1 tsp dried chilli flakes
1 lime leaf, sliced into batons
To make the dressing, combine sesame oil, ginger, lime juice, chilli flakes and lemon oil in a bowl.
Coat chicken breasts in the dressing, place onto foil lined with baking paper (so that the chicken is sitting on top of the baking paper). Top with pak choy, coriander, lemongrass, 2 lime leaves, pinch of salt, lemon oil and remaining dressing. Place another piece of foil lined with baking paper over the top and crimp the edges closed.
Place parcel into a pan over medium heat and cook for 15 to 20 minutes.
