Roast Vegetables


PREP TIME 10 minutes
COOK TIME 1 hour


¼ cup maple syrup
¼ cup fresh orange juice
¼ cup Pukara olive oil
1 tsp chilli flakes
1 clove garlic, sliced
1 red onion, cut in wedges
1 bunch dutch carrots
1 butternut pumpkin, chopped with the skin on
1 medium sweet potato, chopped with the skin on
2 sprigs rosemary


Step 1
Preheat oven to 180ºC. In a small bowl combine maple syrup, orange juice, olive oil, chilli flakes and garlic.

Step 2
On a roasting tray add red onion, carrots, pumpkin and sweet potato. Coat with half of the dressing and place rosemary sprigs on top.

Step 3
Place in the oven and cook for 45 minutes to an hour, or until golden brown.
