Spare Ribs


PREP TIME 2+ hours
COOK TIME 20 minutes


Juice of 1 orange
⅓ cup brown sugar
1 tbsp Pukara chilli oil
1 tbsp Pukara fig balsamic vinegar
1 tbsp fish sauce
5 pork spare ribs


Step 1
To make the marinade, add orange juice, brown sugar, chilli oil, fig balsamic and fish sauce to a bowl and mix together. Place ribs in the marinade and leave to marinate for a minimum of 2 hours in the fridge - the longer the better.

Step 2
Place ribs onto the Ozpig grill and turn every 5 minutes for around 20 minutes. Brush the ribs with marinade after each turn.
