Tempura Abalone


PREP TIME 15 minutes
COOK TIME 5 minutes


1 abalone, sliced thinly
1 cup plain flour
½ cup cornflour
Pinch of Tasman sea salt
½ cup soda water, cold
½ cup ice
500ml canola oil


Step 1
Using half of the plain flour, lightly coat sliced abalone.

Step 2
Add corn flour, remaining plain flour, salt, soda water and ice to a bowl. Mix until it forms a thin batter.

Step 3
Heat oil in a pan to 160-180 degrees. Coat abalone in a thin layer of batter. Place abalone in oil for approximately 45 seconds to 1 minute. Remove excess oil with paper towel and season with a pinch of sea salt.
