Totopos Soup


PREP TIME 10-15 minutes
COOK TIME 40 minutes


400g gravy beef
1 onion, thinly sliced
3 tomatoes, deseeded and diced
2 garlic cloves, diced
50g tomato paste
1 tbsp cumin
500ml beef stock
200g Old El Paso refried beans
400g Old El Paso black beans
2 bay leaves

To serve;
1 green chilli, sliced
Old El Paso Nachips


Step 1
Add beef to a pressure cooker over medium heat, sear, without the lid on, for approximately 5 minutes. Add onion, tomato and garlic. Sear for a further 5 minutes. Add tomato puree, cumin and beef stock, put the lid on and let simmer for 30 minutes.

Step 2
Add refried beans, black beans and bay leaves, simmer for a further 5 minutes, lid off.

To serve, place soup into a bowl, garnish with fresh chilli and a side of Nachips.
