Vegemite on Toast


PREP TIME 5 minutes
COOK TIME 5 minutes


4 slices sourdough, to serve
1 garlic clove
2 tsp of vegemite
1 avocado cut in slices
2 lemon cheeks
3-4 cherry tomatoes, cut in quarters
1 chilli, sliced (optional)
¼ cup pecorino cheese, finely grated
Drizzle of Pukara olive oil
Fresh micro herbs
Pinch of chilli flakes


Step 1
Add sourdough slices to a toaster. Once toasted rub with a clove of garlic while it is still warm.

Step 2
Spread on the vegemite and top with a layer of avocado, squeeze of lemon juice, tomatoes, fresh chilli and pecorino cheese. Drizzle with olive oil, a garnish of micro herbs and a pinch of chilli flakes.
