Chermoula Lamb Cutlets


PREP TIME 10 minutes
COOK TIME 20 minutes


1 handful coriander
1 handful flat leaf parsley
3 cloves garlic
½ tsp paprika
½ tsp ground cumin
½ tsp chilli flakes
100ml Pukara olive oil
½ lemon, juice
1 pinch Tasman sea salt
3 lamb cutlets
2 tsp dried mint
½ cup couscous


Step 1
Place coriander and parsley into a mixer and blitz together with garlic, paprika, ground cumin and chilli flakes.

Step 2
Add in oil, lemon juice and salt and blitz together again.

Step 3
Once blitzed together, spread a spoonful onto both sides of the lamb cutlets and leave to marinate for approx 10 minutes.

Step 4
After 10 minutes, place cutlets into a hot oiled pan and turn until cooked.

Step 5
Add dried mint and couscous to a pot of water and cook before serving up with lamb cutlets.
