Chicken Larb Salad with Lime Dressing


PREP TIME 10 minutes
COOK TIME 20 minutes


Old El Paso fajita spice mix
Pukara olive oil
900g chicken mince
1 tbsp palm sugar, chopped
15 cherry tomatoes, sliced in half
½ red onion, sliced thinly
1 red chilli, sliced thinly
1 cup almonds, crushed
5 tbsp soy sauce
½ lime, juice
2 tbsp water
½ bunch coriander, roughly chopped
1 pinch Tasman sea salt


Step 1
Place chicken mince and palm sugar into a hot oiled pan and cook for approx 2 minutes.

Step 2
After approx 2 minutes, add cherry tomatoes, onion, chilli and almonds and stir together before adding soy sauce, lime juice, spice mix, and stirring again.

Step 3
Once stirred together, add water and coriander and stir again before leaving until cooked.

Step 4
Once chicken is cooked, remove the pan from heat before adding a pinch of salt and stirring together again.
