3 tbsp Pukara olive oil
Preheat oven to 180ºC. Peel potatoes, cut into quarters and place into a pot of boiling water with a pinch of salt. Cook for approx 15 minutes with the lid off.
After 15 minutes, remove potatoes and place into a tray with a pinch of salt and dry off for a few minutes.
Heat up some oil in a pan.
Add potatoes into a colander and shake well to rough up edges before rubbing in with hot oil.
Place potatoes into an oven and cook for approx 30-40 minutes before turning over and cooking for a further 20-30 minutes.
