Macadamia Milk and Kokoda


PREP TIME 20 minutes
COOK TIME 15 minutes


1 ½ cups macadamias
2 dates, roughly chopped
4 cherry tomatoes, roughly chopped
1 fillet white flesh fish, roughly chopped
1 tbsp chives, sliced
1 tbsp mint, sliced
½ green chilli, thinly sliced
1 lime, juice
½ red onion, sliced
Tasman sea salt


Step 1
Place macadamias into a blitzer and cover them with water before blitzing them together until at a smooth consistency.

Step 2
Add dates, cherry tomatoes, fish, chives, mint, chilli, lime juice, onion and a pinch of salt to a bowl and mix together well before placing into the fridge for approx 15 minutes until lightly cured.

Step 3
After approx 15 minutes, remove from fridge and add macadamia milk to bowl. Stir around until lightly coated before serving with a few pieces of chilli and mint on top.
