1 beef eye fillet
1 orange, juice
1 lime, juice
1 capsicum, diced
2 cloves garlic, thinly sliced
½ packet Old El Paso taco spice mix
½ jar Old El Paso pickled jalapeños
1 tsp paprika
¼ cup chipotle salsa
Tasman sea salt
Preheat oven to 180ºC. Add orange juice, lime juice, capsicum, garlic, pickled jalapeños, paprika, taco spice mix and chipotle salsa into a bowl and mix together well.
Once mixed together, pour into a snap lock bag with beef and place into the fridge for approx 4 hours.
After approx 4 hours place beef onto a roasting tray with marinade on top before placing into the oven for approx 20 minutes until cooked.
Once cooked, serve with an assortment of roast vegetables.
