Scallop Casarecce


PREP TIME 5 minutes
COOK TIME 25 minutes


200g Barilla Casarecce
½ brown onion, diced
½ brown onion, sliced
1 lemon, juice
2 cloves garlic, finely diced
¼ cup crème fraiche
150g scallops
1 portion smoked salmon, diced
Pukara olive oil
2 cups fish stock
1-2 tsp fish sauce


Step 1
Add onion and garlic into an oiled pan and sauté for approx 5 minutes.

Step 2
After approx 5 minutes, add in salmon and cook for a further 2-3 minutes before adding fish sauce, casarecce and fish stock and mixing together. Leave to simmer for a couple of minutes until the liquid begins to thicken.

Step 3
Once mixed together, stir in crème fraiche before adding in scallops and leaving for approx 3 minutes until cooked.
