Smoky Salted Caramel


PREP TIME 5 minutes
COOK TIME 10 minutes


1 ½ cups sugar
1 cup water
100g double cream
1 pinch Tasman smoked sea salt
12 cherries
5 lattice biscuits
3 tbsp mascarpone


Step 1
Add sugar and water into a pot and heat up.

Step 2
Once sugar has dissolved and reached a golden colour, remove from heat and stir in double cream and salt.

Step 3
Slice cheeks off cherries and place into a bowl on top of lattice biscuits and mascarpone before drizzling the salted caramel sauce over the top.
