Cucumber and Red Onion Pickles


PREP TIME 5 minutes
COOK TIME 2-5 minutes


½ cup sugar
½ cup Pukara white balsamic vinegar
1 red onion, sliced
1 cucumber, sliced
1 tsp mustard seeds
1 tsp peppercorns
½ lemon


Step 1
In a pot over low heat, add sugar and white balsamic, stir until sugar has dissolved.

Step 2
In a jar add red onion, mustard seeds and half of the syrup. In a separate jar, add cucumber, peppercorns, juice of half a lemon and the remaining syrup. Screw the lids tightly closed and store in the fridge.
