Eye Fillet Tartare with Wasabi Mayonnaise
PREP TIME 10 minutes
COOK TIME 5 minutes
12 broad beans
10-12 prawn crackers
2 tsp chives, finely chopped
Small handful plantain (salad green), finely chopped (optional)
1 small avocado, diced
400g Pure Black eye fillet, finely diced
2 tbsp kewpie mayonnaise
½ tsp Shima wasabi powder
Fresh micro herbs, to garnish
Place broad beans in boiling water and blanch (until they float), remove and place in ice water. Once cool, peel and set aside.
Place prawn crackers in hot oil and wait for them to expand and float to top, remove and place onto paper towel.
In a medium bowl add chives, plantain, avocado and eye fillet.
In a separate bowl place a small amount of wasabi powder with the juice of half a lime and stir, once combined add kewpie mayonnaise and stir until well combined. Pour mayonnaise over the eye fillet mixture. Stir until mixture is well coated.
To serve, place mixture on prawn crackers, garnish with fresh micro herbs.
