Honey Lemon Haloumi

½ tbsp Pukara olive oil
250g haloumi, sliced
½ cup black olives, halved
¼ cup honey
Juice of 1 lemon
2 bay leaves
8 slices sopressa
Tasman sea salt


Step 1
In a pan over medium heat, caramelise haloumi on each side, approximately 2 minutes each side. Once golden, add olives, honey, lemon juice, bay leaves and a pinch of salt to the pan.

To serve, place haloumi onto a plate and drizzle over remaining sauce from the pan. Top with sopressa and a pinch of salt.
