Hot Smoked Salmon Potato Salad

COOK TIME 5 minutes


4-5 chat potatoes, boiled and cooled
200g Huon hot smoked salmon

For the dressing;
½ cups Meander Valley créme fraiche or sour cream
1 tbsp honey
1 tsp seeded mustard
1 tsp dijon mustard
1 lemon
Pinch of Tasman sea salt

To serve;
Handful rocket
Handful parsley
Handful tarragon


Step 1
For the dressing combine sour cream, honey, seeded mustard, dijon mustard, lemon juice and salt in a small bowl and stir.

Step 2
Place potatoes in a large bowl and crumble salmon fillet over the top, toss to combine.

To serve, place a bunch of rocket, parsley and tarragon on a large plate. Top with the potato mix and dollop the dressing around the plate.
