Never Fail Meringue


PREP TIME 20 minutes
COOK TIME 1 hour


200g egg white
200g caster sugar
⅓ cup icing sugar
1 tbsp cornflour

For the whipped cream;
300ml pure cream
½ cup icing sugar
Mixed berries, to serve


Step 1
Preheat oven to 100°C. Using a stand mixer, whisk egg whites until it forms soft peaks, gradually add in caster sugar and continue to whisk until hard peaks form. Sift icing sugar and corn flour over the mixture, gently fold to combine.

Step 2
Place mixture into a baking tray and build to desired shape and size. Place in the oven and cook for 45 minutes to an hour.

Step 3
Meanwhile, add cream and icing sugar to a stand mixer, whisk until soft peaks form.

To serve, spread whipped cream over the pavlova and top with mixed berries.
