Broccoli Salad


PREP TIME 5 minutes
COOK TIME 10 minutes


4 rashers bacon, roughly diced
2 tbsp almonds, sliced
2 broccoli heads
1 tbsp Pukara olive oil
1 tbsp white vinegar
2 tbsp dijon mustard
1 tbsp honey
1 pinch Tasman sea salt
1 tbsp dried cranberries
1 tbsp parmesan cheese, grated


Step 1
Add bacon and almonds into a pan on medium heat and cook for a few minutes.

Step 2
Place broccoli into a boiling pot of water and cook for one minute before removing and placing into cold water.

Step 3
Add oil, white vinegar, dijon mustard, honey and salt into a jar and shake together well.

Step 4
Mix broccoli, bacon and almonds together in a bowl and plate up with a drizzle of dressing, cranberries and parmesan cheese over the top.
