Chicken Curry


PREP TIME 20 minutes
COOK TIME 2 hours 30 minutes


1 brown onion, diced
750g chicken thigh, roughly chopped
1 tbsp vegetable oil
2 cloves garlic, diced
5cm ginger, grated
2 tbsp curry powder
½ tsp turmeric
1 tsp black mustard seeds
3 tomatoes, roughly chopped
3 potatoes, roughly chopped
1 green capsicum, sliced
½ red chilli, sliced
Tasman sea salt


Step 1
Place onion into a pot with a drizzle of vegetable oil, garlic and ginger and cook through until onion becomes soft.

Step 2
Once onion has softened, add curry powder, turmeric and black mustard seeds and stir together until spices become fragrant.

Step 3
Once spices become fragrant, add chicken and stir together until chicken is coated and leave until colour forms on the outside of chicken.

Step 4
Once colour has formed on the outside of chicken, add tomato, potato, capsicum, chilli and a large pinch of salt and mix around before leaving to sit for approx 2 hours.

Step 5
After approx 2 hours, serve with steamed rice.
