Chilli Caramel Speck
PREP TIME 5 minutes
COOK TIME 10 minutes
1 ½ cups brown sugar
1 lemon, juice
1 lime, juice
2 cloves garlic
1 tbsp soy sauce
1 tbsp fish sauce
1 portion speck, sliced into 5cm pieces
2 chillies, sliced
Add brown sugar, lemon, lime, chilli, ginger, garlic, soy sauce and fish sauce to a pot on medium heat.
Place slabs of speck onto barbecue grill.
Once glaze is at a bubble, lightly glaze speck and turn over until cooked.
Once cooked, plate up with another drizzle of glaze on top.
