Lentil Salad


PREP TIME 5 minutes
COOK TIME 35 minutes


1 cup lentils
3 cups water
2 tsp sage, finely chopped
1 tsp oregano
2 tsp flat leaf parsley, finely chopped
½ red onion, diced
1 tbsp red wine vinegar
3 tbsp Pukara olive oil
½ tsp mustard
1 pinch Tasman sea salt


Step 1
Add lentils into a pot with water and leave for approx 20-25 minutes until cooked.

Step 2
Finely chop sage, oregano, parsley and onion.

Step 3
Add red wine vinegar and olive oil into a jar with mustard and shake together well.

Step 4
Once lentils are cooked, drain water and add to a bowl with onion, sage, oregano, parsley, vinaigrette and a pinch of salt before mixing together and serving up.
