Fajita Roast Pumpkin
PREP TIME 5 minutes
COOK TIME 30 minutes
1 butternut pumpkin, roughly chopped
1 packet Old El Paso fajita spice mix
Pukara olive oil
Tasman sea salt
1 tbsp sour cream
25g parmesan cheese, grated
5 sprigs coriander
Preheat oven to 170ºC. Add butter and fajita spice mix into a pan on a medium heat and stir together until butter is melted and becomes a brown colour.
Pour butter into a bowl with pumpkin, a drizzle of oil, and a pinch of salt before mixing together until pumpkin is coated.
Once pumpkin is coated, place into a roasting tray before placing into the oven for approx 20-25 minutes until cooked.
Once cooked, serve pumpkin with sour cream, parmesan, coriander and a pinch of salt on top.
