Flat Iron Steak with Tomato Salad
PREP TIME 15 minutes
COOK TIME 10 minutes
1 flat iron steak
½ red onion, sliced
10 kalamata olives, roughly chopped
½ packet Old El Paso fajita spice mix
2 tomatoes, roughly chopped
Tasman sea salt
1 pinch oregano
1 tsp red wine vinegar
Add onion, olives, tomato, a pinch of salt, oregano and red wine vinegar into a bowl and stir together.
Place fajita spice mix onto both sides of the steak and pat down before adding a drizzle of oil to each side and rubbing in.
Once spice mix is rubbed in, place steak onto a hot pan and cook for approx 2 minutes on each side.
Once steak is cooked, remove from pan and sit to rest for approx 2 minutes before slicing and plating up with salad.
