Mexican Chicken Frittata
PREP TIME 10 minutes
COOK TIME 20-25 minutes
Pukara olive oil
5 chicken breasts, diced
1 packet Old El Paso fajita spice mix
½ cup cheese, grated
2 spring onions, sliced
2 tbsp Old El Paso pickled jalapeños, roughly chopped
Tasman sea salt
3 tbsp sour cream
Place chicken and spice mix into an oiled pan over hot coals and leave for approx 8-9 minutes until chicken is cooked.
Add eggs, cheese, spring onions, jalapeños, sour cream and a pinch of salt into a bowl and stir together well.
Once stirred together well, pour into pan with chicken and place over the coals for approx 3-4 minutes until cooked.
