Seafood and Coconut Soup


PREP TIME 5 minutes
COOK TIME 20 minutes


1 litre chicken stock
3 sticks lemon grass, roughly cut
500ml coconut water
400g raw marinara mix
½ green chilli, sliced
½ red chilli, sliced
½ lime, juice
1 tsp tamarind paste
3 tsp fish sauce
¼ tsp palm sugar, grated
7 leaves mint
¼ bunch basil
¼ bunch coriander


Step 1
Add chicken stock, lemongrass and coconut water into a pot with lid on and bring to a boil before leaving at a light simmer for approx 10 minutes.

Step 2
After approx 10 minutes, add marinara mix and leave for approx 3 minutes.

Step 3
After approx 3 minutes, add green chilli, red chilli, lime juice, tamarind paste, fish sauce and palm sugar.

Step 4
Once marinara mix is cooked, remove from heat and add mint, basil and coriander before mixing together well and serving.
