Seared Swordfish with Braised Radicchio


PREP TIME 5 minutes
COOK TIME 25 minutes


1 radicchio, cut into ¼
1 red onion, cut into 6 wedges
3 star anise
1 tbsp fish sauce
1 orange, juice
1 cinnamon stick
1 garlic, whole
1 tbsp brown sugar
1 swordfish steak
1 tbsp Pukara olive oil


Step 1
Add radicchio, red onion, star anise, fish sauce, orange juice, cinnamon stick, garlic, brown sugar and a splash of water into a pan and bring to a simmer before leaving to cook for approx 15 minutes with a piece of baking paper covering the pan.

Step 2
After approx 15 minutes, remove pan from heat and sit aside to thicken up.

Step 3
Place swordfish into an oiled pan for approx 3-4 minutes until cooked.

Step 4
Once cooked, serve with braised vegetables on top.
