Suspiro de Limeña
PREP TIME 5 minutes
COOK TIME 2 hours
395ml condensed milk
395ml evaporated milk
3 eggs, separated
1 tsp vanilla essence
1 cup caster sugar
¼ cup water
1 tsp cinnamon
Gently heat condensed milk and evaporated milk in a pot.
Roughly beat egg yolks whilst adding 2-3 spoonfuls of milk mixture to bowl. Then gently stir together until it reaches a thick consistency.
Once at a thick consistency, add in vanilla essence and stir again before placing into the fridge for approx 15-20 minutes until cooled down.
Add caster sugar and water to a pot and heat up before placing into a stand mixer with egg whites and whisking until it reaches a soft peak.
Once it has reached a soft peak, pipe into the top of a glass on top of milk mixture.
Dust cinnamon over the top and place into the fridge for approx 30-60 minutes until set.
