Tuscan Bread Soup


PREP TIME 5 minutes
COOK TIME 20 minutes


1 red onion, diced
2 cloves garlic, thinly sliced
1 tsp chilli flakes
1 tsp Tasman sea salt
2 tbsp Pukara olive oil
800g peeled Italian tomatoes
½ cup red wine
½ loaf sourdough, cut into cubes
12 basil leaves, chopped
2 tbsp balsamic


Step 1
Add red onion, garlic and chilli flakes to a pot with a pinch of salt and a drizzle of oil before leaving to cook for approx 2-3 minutes until onion is soft.

Step 2
After approx 2-3 minutes minutes when onion is soft, add tomatoes and red wine before mixing together and leaving to cook for approx 5 minutes.

Step 3
After approx 5 minutes, add sourdough, basil, balsamic and a pinch of salt before serving up with a few basil leaves and a drizzle of oil on top.
