1 lebanese cucumber, diced
1 lemon, juice
½ bunch mint, chopped
Tasman sea salt
250g sour cream
1 packet Old El Paso regular flour tortillas
Pukara Olive Oil
3 radishes, sliced in half
3 baby zucchini, sliced in half
Preheat oven to 165ºC. Add sour cream, cucumber, lemon juice, mint and a pinch of salt into a bowl and mix together.
Slice tortillas into triangles before placing into a bowl with a drizzle of oil and a pinch of salt. Mix together.
Once mixed together, place onto a baking tray and place into oven for approx 35 minutes.
Once tortillas are crispy, serve up with tzatziki.
