Grilled Halloumi Salad
PREP TIME 2 minutes
COOK TIME 10 minutes
2 slices sourdough
½ block halloumi
Pukara olive oil
1 clove garlic
10 cherry tomatoes, chopped in half
5 sprigs parsley, torn
4 tbsp roasted tomato reduction
Slice halloumi into 1cm thick pieces and add a drizzle of oil over the top of the sourdough.
Place halloumi and sourdough onto a char grill and add a drizzle of olive oil on the other side. Leave for approx 3-4 minutes before turning over and cooking on the other side.
Place tomatoes and parsley into a bowl with a drizzle of oil and roasted tomato reduction and mix together well.
Once halloumi and sourdough is cooked, remove from char grill and rub a clove of garlic on top of sourdough.
Slice halloumi into thirds and place onto sourdough with tomato and parsley salad on top.
