Beef Mole


PREP TIME 5 minutes
COOK TIME 4 hours 30 minutes


2 pieces ossobuco
Pukara olive oil
3 sapphire potatoes, roughly chopped
1 brown onion, diced
2 cloves garlic, thinly sliced
1 packet Old El Paso taco spice mix
1 cup red wine
1 orange, juice
1 cup chicken stock
¼ cup walnuts
4 squares chocolate


Step 1
Preheat oven to 180ºC. Place ossobuco into an oiled pan and leave to sear until coloured on both sides before removing from pan.

Step 2
Add onion, garlic, taco spice mix and a drizzle of oil into the pan and stir together until translucent before adding red wine and ossobuco in and reducing by half.

Step 3
Once reduced by half add stock and cook for a further 2-3 minutes before adding orange juice, potatoes and chocolate, placing lid onto pan and placing into the oven for approx 3-4 hours until cooked.
