Homemade Pickles


PREP TIME 5 minutes
COOK TIME 10 minutes


1 cup white vinegar + red wine
2 cups water
1 cup sugar
4 star anise
1 pinch chilli flakes
1 pinch Tasman sea salt
3 purple carrot, sliced with mandolin
1 tsp fennel seeds
1 cup vinegar
2 baby cucumbers, sliced with mandolin
2 fennel, sliced with mandolin


In warm water:

Step 1
Add red wine and vinegar into a pot with 1 cup water, ½ cup sugar, star anise, chilli flakes and salt before heating up and stirring until sugar is dissolved.

Step 2
Once sugar is dissolved, remove from heat and add sliced carrots and fennel.

In cold water:

Step 1
Add 1 cup cold water, fennel seeds, vinegar, sugar, chilli flakes and salt into a jar with baby cucumbers and sliced fennel before placing into the fridge to cool.
