2 shots bourbon
¾ shot lemon juice
1 shot maple syrup
4-5 drops of barbecue bitters
½ egg white
Handful of ice
Put bourbon, lemon juice, maple syrup and barbecue bitters into a cocktail shaker glass.
In a separate bowl, separate out the egg white and whisk gently. Place half of the egg white into the cocktail shaker glass.
Place a handful of ice into the cocktail shaker glass, place shaking tin over the top and shake together well.
Place hickory woodchips into a cold smoker and infuse into the mixture in the cocktail shaker for a few minutes.
Serve in a glass with a few extra drops of barbecue bitters on the top.
