Sweet Pearl Barley Risotto


PREP TIME 5 minutes
COOK TIME 30 minutes


1 cup pearl barley
1 cup almonds
1 cup water
1 cinnamon stick
1 ½ cups coconut milk
¾ cup brown sugar
1 vanilla stick
½ orange, juice
2 ½ tbsp maple syrup
¼ cup cranberries
1 banana, sliced


Step 1
Add pearl barley into a pressure cooker and leave for a few minutes before adding almonds, water, cinnamon, coconut milk, brown sugar and vanilla and closing lid to cook for approx 15 minutes.

Step 2
After approx 15 minutes, add orange juice, maple syrup and cranberries and cook for another 5 minutes.

Step 3
After 5 minutes, plate up with banana, a drizzle of maple syrup and a cinnamon stick on top.
